Banana, White Chocolate & Raspberry Loaf

Ingredients
  1. 2 cups self raising flour
  2. ¾ cup brown sugar
  3. 2 eggs
  4. 3 bananas, mashed
  5. 1 teaspoon vanilla extract
  6. 1/3 cup milk
  7. 1/3 cup yoghurt
  8. ½ cup vegetable/coconut oil
  9. 1/3 cup white chocolate chips
  10. 1 cup raspberries (fresh or frozen)
Instructions
  1. Preheat a fan-forced oven to 180C and line or grease a loaf pan.
  2. In a large bowl whisk the eggs, sugar, oil, milk, yoghurt and vanilla until well combined.
  3. Using a wooden spoon, stir through the mashed banana.
  4. Sift in the flour and stir well.
  5. Lastly, fold through the white chocolate chips and raspberries.
  6. Bake for 45-50 minutes or until completely cooked through.
  7. Set aside to cool in the pan for 5 minutes, before slicing into 8 portions.
