
Chilli Jam

This versatile jam is great served with various meats, as a side on a cheese plate or tossed through a stir fry!

Ingredients
- 5 long red chillies, roughly chopped
- 4cm piece fresh ginger, grated
- 3 cloves garlic, chopped
- 1 red or brown onion, quartered
- 2 tbsp fish sauce
- 1 1/2 cups white caster sugar
- 1/3 cup apple cider vinegar
- 2 tbspn water
- 1 tspn salt
Instructions
- Place all ingredients in a food processor and blend for 30 seconds, or until all ingredients are finely chopped.
- Transfer ingredients into a saucepan & stir over low heat until the sugar dissolves.
- Once all the sugar has dissolved, increase heat and bring to the boil.
- Reduce heat again to low & simmer for 10-12 minutes, stirring occasionally.
- Spoon the jam into dry jars and set aside for 1 hour before storing in the fridge.
