Chilli Jam

This versatile jam is great served with various meats, as a side on a cheese plate or tossed through a stir fry!

Ingredients
  1. 5 long red chillies, roughly chopped
  2. 4cm piece fresh ginger, grated
  3. 3 cloves garlic, chopped
  4. 1 red or brown onion, quartered
  5. 2 tbsp fish sauce
  6. 1 1/2 cups white caster sugar
  7. 1/3 cup apple cider vinegar
  8. 2 tbspn water
  9. 1 tspn salt
Instructions
  1. Place all ingredients in a food processor and blend for 30 seconds, or until all ingredients are finely chopped.
  2. Transfer ingredients into a saucepan & stir over low heat until the sugar dissolves.
  3. Once all the sugar has dissolved, increase heat and bring to the boil.
  4. Reduce heat again to low & simmer for 10-12 minutes, stirring occasionally.
  5. Spoon the jam into dry jars and set aside for 1 hour before storing in the fridge.
