Choc Hazelnut & Chia Cake (Gluten & Dairy Free)

Ingredients
  1. 4 tablespoons chia seeds (soaked in 1 cup of water for 15 mins)
  2. ½ cup cocoa powder, sifted
  3. ½ cup coconut oil
  4. 5 medium eggs
  5. 1 cup hazelnut meal
  6. 2 teaspoons gluten-free baking powder
  7. 1 cup maple syrup, honey or rapidura sugar
  8. 2 teaspoons cinnamon
  9. 2 teaspoons vanilla extract
Instructions
  1. Preheat a fan-forced oven to 160C and line or grease a cake tin.
  2. Place all ingredients in a bowl and whisk for 1-2 minutes and until well combined.
  3. Pour the mixture into the prepared cake tin and bake for 35-40 minutes.
  4. Allow the cake to cool for 5 minutes before turning out onto a wire rack to cool completely.
  5. Dust with a little icing sugar or chopped nuts before serving.
