Ingredients
  1. 1 roasted chicken, meat torn off the carcass
  2. 3L chicken stock
  3. 1 cup angel hair pasta
  4. 1 onion, diced
  5. 4 garlic cloves, crushed
  6. 1 carrot, diced
  7. 1/2 cup potato, diced
  8. ½ cup sweet potato, diced
  9. ½ cup pumpkin, diced
  10. 1 celery stick, diced
  11. 1 small zucchini, diced
  12. 1/4 cup frozen peas
  13. ¼ cup frozen corn
  14. 1 bunch of parsley, chopped
  15. 2 bay leaves
  16. Salt & Pepper, to season
  17. Olive oil, for frying
Instructions
  1. Heat oil in a pot over medium heat. Add onion & garlic and cook for 2-3 minutes, or until softened. Add in the potato, sweet potato, carrot, pumpkin & celery and cook for 3-4 minutes.
  2. Add in the chicken stock & bay leaf and bring to the boil. Reduce and simmer for 10-14 minutes. Add in the chicken, pasta, zucchini, peas & corn and simmer for another 4 minutes.
  3. Stir through the chopped parsley and season with salt and pepper.
