
Easy Chicken & Noodle Soup

Ingredients
- 1 roasted chicken, meat torn off the carcass
- 3L chicken stock
- 1 cup angel hair pasta
- 1 onion, diced
- 4 garlic cloves, crushed
- 1 carrot, diced
- 1/2 cup potato, diced
- ½ cup sweet potato, diced
- ½ cup pumpkin, diced
- 1 celery stick, diced
- 1 small zucchini, diced
- 1/4 cup frozen peas
- ¼ cup frozen corn
- 1 bunch of parsley, chopped
- 2 bay leaves
- Salt & Pepper, to season
- Olive oil, for frying
Instructions
- Heat oil in a pot over medium heat. Add onion & garlic and cook for 2-3 minutes, or until softened. Add in the potato, sweet potato, carrot, pumpkin & celery and cook for 3-4 minutes.
- Add in the chicken stock & bay leaf and bring to the boil. Reduce and simmer for 10-14 minutes. Add in the chicken, pasta, zucchini, peas & corn and simmer for another 4 minutes.
- Stir through the chopped parsley and season with salt and pepper.
