Lentil & Chickpea Patties

These protein-packed patties are perfect for meat-free Monday or if you are wanting to spice up your weekly lunch or dinner regime! They are super easy to put together (ready in 30 minutes flat), making them one of my favourite go-to meals!

Ingredients
  1. 400g can of chickpeas, drained
  2. 400g can of lentils, drained
  3. 200g breadcrumbs
  4. 200g oats
  5. 1 tablespoon tahini
  6. 1 tablespoon honey/maple syrup
  7. 1 tablespoon cumin
  8. 1 tablespoon garam masala
  9. 1 tablespoon lemon juice
  10. 1 teaspoon lemon rind
  11. 1 tablespoon water
  12. 1 egg
  13. 2 cloves of garlic
  14. ½ red onion
  15. 1 handful of coriander/parsley
  16. ½ zucchini
  17. 1 carrot
  18. ½ cup of olive oil, for frying
Tahini Sauce
  1. ½ cup tahini
  2. ¼ cup lemon juice
  3. ¼ cup water
  4. ¼ cup olive oil
  5. ½ teaspoon of cumin
  6. 1 clove of garlic, crushed
  7. 1 teaspoon honey
  8. Pinch of salt & white pepper
Instructions
  1. Preheat the oven to 180C.
  2. To make the patties, process all ingredients in a food processor until the mixture is well combined and smooth.
  3. Divide mixture into 12 and then form rounded patties.
  4. Place the oil in a frying pan & place over medium heat. Cook the patties for 2-3 minutes each side or until golden. Place on a lined baking tray & cook in the oven for a further 10 minutes.
  5. To make the tahini sauce, simply whisk together all ingredients in a bowl until it forms a creamy and smooth texture.
  6. Serve patties with a drizzle of tahini sauce.
