Oat, Sultana & Chia Seed Cookies

Ingredients
  1. 1 cup oats
  2. 1 cup plain flour
  3. 1/2 teaspoon baking powder
  4. 1 teaspoon cinnamon
  5. 1 tablespoon chia seeds (soaked in 2 tablespoons of water for 5 minutes)
  6. ½ cup maple or golden syrup
  7. 125gm butter, melted
  8. 1 egg
  9. 1 teaspoon vanilla extract
  10. 1 cup sultanas
Instructions
  1. Preheat a fan forced oven to 160C and line a tray with baking paper.
  2. In a large bowl mix together the flour, oats, cinnamon and baking powder.
  3. In a separate bowl mix together the egg, butter, vanilla, maple/golden syrup and chia seeds.
  4. Add the wet ingredients into the try and mix until well combined. Stir through the sultanas.
  5. Roll into tablespoon sized balls and place onto the baking tray. With your fingers or the back of a fork, press down gently to flatten the cookies slightly.
  6. Bake for 12-15 minutes or until golden brown.
