Orange, Mint & Fennel Salad

Ingredients
  1. 4 oranges, thickly sliced (* I used half Navel & half Blood oranges)
  2. 1/2 fennel bulb, finely shaved
  3. 2 radishes, finely sliced
  4. 1 handful of mint leaves, torn
  5. 1/2 red onion, halved & sliced
  6. 60g packet of rocket
  7. 150g goats cheese or danish feta
Dressing
  1. 2 tablespoons extra virgin olive oil
  2. 2 tablespoons white wine vinegar
  3. 1 tablespoon honey/maple syrup
  4. 2 teaspoons wholegrain mustard
  5. 1 teaspoon lemon juice
  6. pinch of salt & pepper
Instructions
  1. Place the rocket, oranges, red onion, fennel, mint, radishes on a serving platter.
  2. Gently crumble the cheese on top and drizzle generously with dressing.
  3. Enjoy!
