
Orange, Mint & Fennel Salad

A fresh & tangy citrus salad

Ingredients
- 4 oranges, thickly sliced (* I used half Navel & half Blood oranges)
- 1/2 fennel bulb, finely shaved
- 2 radishes, finely sliced
- 1 handful of mint leaves, torn
- 1/2 red onion, halved & sliced
- 60g packet of rocket
- 150g goats cheese or danish feta
Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey/maple syrup
- 2 teaspoons wholegrain mustard
- 1 teaspoon lemon juice
- pinch of salt & pepper
Instructions
- Place the rocket, oranges, red onion, fennel, mint, radishes on a serving platter.
- Gently crumble the cheese on top and drizzle generously with dressing.
- Enjoy!
