Smokey BBQ Pork Ribs

These ribs are seriously finger licking good! They are perfect comfort food on a cooler night, but also make for great leftover meals (See Bbq Pork Brioche Burgers recipe)

Ingredients
  1. 1.5 kg pork ribs
  2. 1½ cups bbq sauce
  3. 2 tbsp tomato sauce
  4. 2 tbsp brown sugar
  5. 30ml apple cider vinegar
  6. ½ long red chilli, finely chopped
  7. 1 garlic glove, finely chopped
  8. 2 tablespoon smokey paprika
  9. 1 tsp salt
  10. 1 tsp pepper.
Instructions
  1. Preheat oven to 130C.
  2. Place the ribs in a large baking dish.
  3. To make the marinade, place all ingredients in a bowl and stir until well combined. (If time permits, marinate the ribs for a few hours/overnight in the fridge).
  4. Once you’re ready to cook, brush 1/3 of the marinade over the pork ribs.
  5. Cover dish with aluminium foil and bake in preheated oven for 2 hours, basting the ribs at the 60 minute mark with ½ of the leftover marinade.
  6. Once the ribs have cooked for 2 hours, remove from the oven and brush the ribs with the remaining marinade and pop in the oven uncovered for a further 30 minutes.
  7. Let the ribs rest for 5 minutes before serving.
