
Smokey BBQ Pork Ribs

These ribs are seriously finger licking good! They are perfect comfort food on a cooler night, but also make for great leftover meals (See Bbq Pork Brioche Burgers recipe)

Ingredients
- 1.5 kg pork ribs
- 1½ cups bbq sauce
- 2 tbsp tomato sauce
- 2 tbsp brown sugar
- 30ml apple cider vinegar
- ½ long red chilli, finely chopped
- 1 garlic glove, finely chopped
- 2 tablespoon smokey paprika
- 1 tsp salt
- 1 tsp pepper.
Instructions
- Preheat oven to 130C.
- Place the ribs in a large baking dish.
- To make the marinade, place all ingredients in a bowl and stir until well combined. (If time permits, marinate the ribs for a few hours/overnight in the fridge).
- Once you’re ready to cook, brush 1/3 of the marinade over the pork ribs.
- Cover dish with aluminium foil and bake in preheated oven for 2 hours, basting the ribs at the 60 minute mark with ½ of the leftover marinade.
- Once the ribs have cooked for 2 hours, remove from the oven and brush the ribs with the remaining marinade and pop in the oven uncovered for a further 30 minutes.
- Let the ribs rest for 5 minutes before serving.
