White Christmas

This recipe is always a hit during the festive season. . The kids and I have made it a yearly tradition that we gift it to their teachers at the end of Term 4 (along with some rocky road!).

Ingredients
  1. 500g white chocolate
  2. 2 tablespoons of coconut oil
  3. 1 ½ cups of rice bubbles
  4. ¾ cup desiccated coconut
  5. 1/3 cup sultanas
  6. 1/3 cup pistachios
  7. 1/2 cup glace cherries, halved
Optional Topping
  1. Shredded coconut, white chocolate chips, glace cherries, pistachios, sultanas.
Instructions
  1. Line a 28cm x 18cm slice tray with baking paper.
  2. Melt the chocolate and coconut oil over a double boiler. Once it’s completely smooth,remove from the heat and stir through the rest of the ingredients.
  3. Mix until all ingredients are covered in the melted chocolate.
  4. Spoon mixture into prepared tray and add some toppings. Refrigerate for at least 2 hours.
  5. Once it has completely set, remove from the lined tray and cut the White Christmas into squares.
